Ingredients
- 2 ounces Brixeur Willamette Valley Gin
- ½ ounce lemon juice
- ½ ounce lavender simple syrup
- Topped with Pashey Pinot Meunier
Process
Start by adding a handful of lavender buds to your simple syrup as it heats on the stove. Once you've completed making your simple syrup, strain out the lavender. Next, add gin, lemon juice and lavender simple syrup to a shaker tin with ice. Shake until well chilled, then double strain into a coupe glass. Top with sparkling Pinot Meunier and garnish with a sprig of lavender.
